Creamy Chicken Pineapple Salad Recipe

In a large bowl, mix together mayonnaise, sesame oil, and 2 tablespoons pineapple juice. Season with salt and ground black pepper to taste. Set aside.

In a small saucepan over medium heat, heat about 2 tablespoons oil and stir fry chicken cubes until cooked through. Drain the oil and add chicken to the bowl with the dressing. Add in remaining ingredients and toss to coat thoroughly. Keep chilled until ready to serve.

When ready to serve, place a lettuce leaf on each plate and top with salad. Serve immediately.
