3 cups water
1 piece onion, sliced
1 root ginger, crushed
bagoong isda (fermented fish)
1 piece milkfish (bangus), fried or grilled
1 cup string beans (sitaw), cut into 2-inch long strips
6 pieces okra
1 cup squash (kalabasa), cut in cubes
1 piece ampalaya (bitter melon), cut in 2-inch rectangular lengths
1 cup malunggay leaves (moringa)
In a casserole, bring water to boil.
Add onion and ginger. Let stand for 3 minutes.
Season with bagoong and continue boiling for 5 minutes.
Remove the scum that rises on top of the liquid and then drop the milkfish.
Simmer for 5 minutes, then add vegetables. Cook until vegetables are done.
TIP: You may also use other vegetables including: upo (gourd), squash flowers, patani (lima beans), tomatoes, and saluyot leaves.
