A Basque burnt cheesecake is a crustless cheesecake. It originates in Basque, an autonomous community in Spain. With a caramelized top and a custardy center, the combination of the texture and its taste is delicious and decadent. Usually, bakers love to bake it the plain with a vanilla flavor, but since it's durian season, I thought of making it durian-flavored and paired it with matcha!
