Easy Ampalaya Salad Recipe

This August, we celebrate the top recipes you love on Yummy. This ampalaya salad or ensaladang amplaya is made pretty with the contrasting colors of the ampalaya, onions, red peppers, and tomatoes! It makes a delicious and easy side dish. Dress it up with an equally easy and tangy vinaigrette salad dressing. You can add other vegetables such as cucumbers or add pieces of shrimp to make this ampalaya salad heartier and more appetizing!

Easy Ampalaya Salad Recipe

Ingredients
  

Easy Ampalaya Salad Ingredients

  • 2 tablespoons rock salt for preparing the ampalaya
  • 2 medium bitter gourd (ampalaya) seeds removed, sliced
  • 1 medium red bell pepper sliced
  • 2 Small red onions sliced
  • 3 Small tomatoes sliced and deseeded
  • 1/2 Cup cane vinegar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons raw sugar
  • water as needed for rinsing ampalaya

Instructions
 

  • Toss rock salt with the sliced ampalaya in a big bowl, and let it sit for 10 minutes. Drain out any bitter liquid from the ampalaya and the bowl. Rinse ampalaya under running water. Place in a drainer (colander) and let any excess liquid drip out from the ampalaya for 15 minutes.
  • Transfer the ampalaya to a dry bowl, and add bell pepper and tomatoes. In a separate bowl, mix vinegar, sugar, salt, and black pepper. Keep in the refrigerator before tossing together and serving.
