Easy Eggs Benedict with Pandesal Ingredients

  • 1/2 Cup Butter
  • 1 egg yolk
  • 1 teaspoon Vinegar
  • 1/2 teaspoon prepared mustard
  • 1 calamansi
  • 2 pandesals
  • 4 slices Canadian bacon
  • 4 fried eggs


  • Melt and simmer butter in a saucepan over low heat. Keep hot. Whisk egg yolk in a bowl with vinegar and prepared mustard in a stainless steel bowl over simmering water until lightened. Slowly pour in hot melted butter while whisking vigorously. Whisk in juice from 1 calamansi. Season with salt, ground pepper, and cayenne pepper to taste. Keep warm, and set aside.
  • Toast pandesal and split open. Heat a nonstick frying pan over medium heat and fry Canadian bacon. Place on top of each pandesal. Fry 4 eggs to desired doneness in the same pan. Top bacon with fried eggs. Spoon over prepared sauce. Serve immediately.
