Easy Eggs Benedict with Pandesal Ingredients
- 1/2 Cup Butter
- 1 egg yolk
- 1 teaspoon Vinegar
- 1/2 teaspoon prepared mustard
- 1 calamansi
- 2 pandesals
- 4 slices Canadian bacon
- 4 fried eggs
- Melt and simmer butter in a saucepan over low heat. Keep hot. Whisk egg yolk in a bowl with vinegar and prepared mustard in a stainless steel bowl over simmering water until lightened. Slowly pour in hot melted butter while whisking vigorously. Whisk in juice from 1 calamansi. Season with salt, ground pepper, and cayenne pepper to taste. Keep warm, and set aside.
- Toast pandesal and split open. Heat a nonstick frying pan over medium heat and fry Canadian bacon. Place on top of each pandesal. Fry 4 eggs to desired doneness in the same pan.
