Easy Eggplant Parmigiana Recipe

The layers of this vegetable dish are made entirely with fried eggplants instead of pasta, so it's a creamy and intensely flavored dish. 

To make the process simpler and the dish more eggplant forward, there's no need to coat the eggplants in breading since it normally becomes incredibly soggy. Instead, eggplants are sliced and immediately fried to develop a delicious crispy char that you just can't get when it's breaded. Together with the easy marinara sauce recipe and two kinds of cheese, this eggplant parmigiana is a simple dish made super tasty.
