Eggplant Pizza Ingredients
- 1 large Japanese eggplant
- 1/2 Cup all-purpose flour
- 1 medium Egg beaten with 1 tablespoon water and 1/2 teaspoon salt
- 1/2 Cup Japanese breadcrumbs (Panko)
- olive oil for drizzling
- 3/4 Cup store-bought pizza
- 1 1/2 cups mozarella cheese grated
Instructions
- Preheat oven to 400°F. Line a baking pan with parchment paper, foil, or a silicone mat.
- Slice eggplant into ¼-inch-thick rounds and dredge in flour. Dip in beaten egg, then dredge in breadcrumbs. Place rounds on prepared tray and drizzle with oil. Bake in the preheated oven for 10 to 15 minutes or until golden brown and edges are crisp.
- Remove from oven and spread 1 to 2 tablespoons pizza sauce on each round.
- Top with cheese. Bake again for about 5 minutes or until cheese is golden and bubbly. Serve hot.
