Ingredients
Fish Embotido Ingredients
- 4 pieces white fish fillets (such as cream dory or lapu-lapu)
- 1 Cup Crackers crushed
- 1 medium red onion peeled, chopped
- 2 cloves Garlic peeled, chopped
- 2 tablespoons pickle relish
- 1/4 Cup raisins
- 1 tablespoon Soy Sauce
- 3 regular-sized fish hotdogs chopped small
- 2 large eggs
- Salt to taste
- ground black pepper to taste
Instructions
- Preheat a steamer. On a large plate, place fish fillets. Season with salt and pepper. Steam until flaky and cooked through. Remove from the steamer and using two forks, flake the fish. Transfer to a large bowl.
- In the large bowl, combine with the flaked fish the crackers, onion, garlic, pickle relish, raisins, soy sauce, hotdogs, salt, pepper, and eggs. Mix thoroughly. (If desired, cook a small portion for seasoning.)
- On a sheet of foil, place about 1 1/2 cups of the fish mixture onto the center. Fold and roll the foil over the fish and twist the ends. Repeat with the remaining fish mixture.
- Place foiled fish into the steamer. Steam for about 20 minutes or until cooked through. Remove from the steamer and let cool and then chill until ready to serve.
- When ready to serve, remove foil, slice into rounds, and gently fry until just lightly golden browned. Serve with ketchup, mixed vegetables, and steamed white rice.
