Ingredients
  

Fish Fillet with Mandarin Oranges

  • 1 piece Egg whites only
  • 2 teaspoons rice wine
  • Pepper
  • 1/2 kilo white fish (use fillets), sliced into 2-inch pieces
  • 3 tablespoons cornstarch
  • Oil for frying
  • 1 1/2 tablespoons vegetable oil
  • 1 piece onion cut into 1/2-inch thick wedges
  • 2 teaspoons curry powder
  • 1 small can mandarin orange drained and juice reserved
  • 1 Table Spoon sugar
  • 1 Table Spoon cornstarch dissolved in 2 tablespoons calamansi juice
  • 3 tablespoons almonds chopped
  • rice (steamed), to serve

Instructions
 

  • Beat egg white in a medium bowl. Add rice wine, salt, and pepper. Add fish and mix gently. Sprinkle cornstarch to coat the fillets.
     
  • Fry fish in hot oil until crisp and golden brown. Drain on paper towels and set aside.
  • Heat oil in a saucepan. Sauté onions until translucent. Add curry powder and juice from canned mandarin oranges. Add sugar. Thicken with the cornstarch-calamansi mixture. Bring to a boil. Adjust seasoning with salt and pepper.
  • Place fish fillets in a shallow bowl and pour the sauce over. Toss gently to coat. Add oranges. Sprinkle almonds and chopped green onions on top. Transfer to a serving dish and serve hot with rice.
