Fried Chicken Bites With Gravy Recipe

Combine the flour, cornstarch, salt, ground pepper, paprika, ground cumin, and garlic powder in a large bowl. Set aside 1 tablespoon of the flour mixture. 

Season the boneless chicken chunks with salt and ground pepper. Add to the flour mixture and toss well to coat each piece. Set aside. 

Heat enough oil in a cast iron pan, frying pan, or wok for deep frying. Prepare a rack over paper towels on the side. 

Cooking in batches, add one chicken piece at a time to the hot oil. (Avoid crowding the pan.) Fry until golden brown on all sides and cooked through. Transfer to the rack. Repeat as needed until all the chicken pieces are cooked. Keep warm. 

Drain the oil from the pan, reserving about 1 tablespoon oil and some of the browned flour in the bottom of the pan. Return to the heat. 

Add and stir the reserved seasoned flour plus the all-purpose flour into the oil in the pan. Pour in milk and water, stirring. Season with chicken powder or bouillon cube and soy sauce. Bring to a simmer and cook until thickened. Serve immediately with fried chcken.
