Ingredients
  

Fried Lumpiang Adobo

  • 1 tablespoon cooking oil
  • 3 cloves Garlic minced
  • 1 Cup leftover adobo minced
  • 1 Cup carrot julienned
  • 1 Cup green beans (sitaw)
  • 1 Cup sweet potato (kamote)
  • 1 Cup monggo sprouts
  • Salt to taste
  • 15 lumpia wrapper
  • Oil for frying
  • spiced vinegar to serve

Instructions
 

  • Heat oil in a pan over medium heat. Saute garlic until fragrant.
  • Add leftover adobo, carots, green beans, kamote, and mongo sprouts; mix thoroughly. Season with salt and pepper. Set aside and allow mixture to cool.
  • Assemble the lumpia: Take a lumpia wrapper and place 2 to 3 tablespoons of the adobo mixture on the center. Roll tightly into a log. Repeat with remaining ingredients.
  • Heat oil in a pan. Fry lumpia rolls until golden brown. Serve immediately with spiced vinegar on the side.
