Ingredients
Fried Lumpiang Adobo
- 1 tablespoon cooking oil
- 3 cloves Garlic minced
- 1 Cup leftover adobo minced
- 1 Cup carrot julienned
- 1 Cup green beans (sitaw)
- 1 Cup sweet potato (kamote)
- 1 Cup monggo sprouts
- Salt to taste
- 15 lumpia wrapper
- Oil for frying
- spiced vinegar to serve
Instructions
- Heat oil in a pan over medium heat. Saute garlic until fragrant.
- Add leftover adobo, carots, green beans, kamote, and mongo sprouts; mix thoroughly. Season with salt and pepper. Set aside and allow mixture to cool.
- Assemble the lumpia: Take a lumpia wrapper and place 2 to 3 tablespoons of the adobo mixture on the center. Roll tightly into a log. Repeat with remaining ingredients.
- Heat oil in a pan. Fry lumpia rolls until golden brown. Serve immediately with spiced vinegar on the side.
