1 tablespoon cooking oil
3 cloves garlic, minced
1 cup leftover adobo, minced
1 cup carrot, julienned
1 cup green beans (sitaw)
1 cup sweet potato (kamote)
1 cup monggo sprouts
salt, to taste
15 lumpia wrapper
oil, for frying
spiced vinegar, to serve
Heat oil in a pan over medium heat. Saute garlic until fragrant.
Add leftover adobo, carots, green beans, kamote, and mongo sprouts; mix thoroughly. Season with salt and pepper. Set aside and allow mixture to cool.
Assemble the lumpia: Take a lumpia wrapper and place 2 to 3 tablespoons of the adobo mixture on the center. Roll tightly into a log. Repeat with remaining ingredients.
Heat oil in a pan. Fry lumpia rolls until golden brown. Serve immediately with spiced vinegar on the side.
