Fried Pompano with Tamarind Sauce

Make the tamarind sauce: Combine all ingredients in a saucepan. Whisk over medium heat. Cook just until sauce thickens; set aside.

Score fish at an angle on both sides. Season with salt. Heat oil in a frying pan. Fry fish until golden and crispy. Drain on paper towels.

Transfer fish to a serving platter. Pour tamarind sauce over fish. Top with fried shallots. Serve immediately.

TIP: INSTEAD OF POMPANO, YOU MAY ALSO USE OTHER TYPES OF FISH SUCH AS LAPU-LAPU AND RED SNAPPER.
