Ingredients
Fried Tilapia Fillet with Instant Corn Salsa
- 1 Cup store-bought marinara sauce cold or at room temperature
- 1/2 Cup Corn kernels
- 2 tablespoons red bell peppers diced
- hot sauce to taste
- 1 tablespoon cilantro (wansoy)
- 1/2 kilo tilapia (use fillet), sliced into 3-inch pieces
- Salt to season
- 2 teaspoons Calamansi Juice
- Oil for frying
- all-purpose flour for dredging
Instructions
- Make the salsa: Mix all ingredients together. Store in the refrigerator until needed.
- Season tilapia fillets with salt, pepper, and calamansi juice.
- Heat oil for frying. Right before cooking, lightly dredge fish fillets in flour.
- Working with a few pieces at a time, fry fish until golden brown. Drain on paper towels to remove excess oil.
- Heat salsa in a pan or in the microwave until warmed. Serve with fried fish. If you d like to make your own marinara sauce, here s a quick recipe: Heat 2 tablespoons olive oil in a saucepan over medium heat. Add 1/2 cup diced onions and sauté until lightly browned. Add 1 garlic clove (minced) and sauté until fragrant. Add 150 ml tomato paste and cook until it changes color. Add an 800-gram can of diced tomatoes and simmer over low heat, stirring occasionally, for 20 minutes or until it thickens slightly. Season to taste and add chopped basil.use the sauce as is or puree until smooth.
