Ingredients
  

Fruit and Nut Stovetop Granola

  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon Salt
  • 1 Cup walnuts
  • 2 1/2 cups rolled oats
  • 1 tablespoon olive oil
  • 1/4 Cup honey
  • 1 Cup dried fruits (we used coconut, cranberries, raisins and apricots)

Instructions
 

  • Combine cinnamon, salt, walnuts, and rolled oats in a medium bowl.
  • In a medium pot over low heat, cook olive oil and honey until it starts to bubble. Add the nut and oat mixture, stirring with a wooden spoon to coat evenly. Continue to stir frequently until granola is crispy and toasted, about 20 minutes.
  • Spread on a parchment paper-lined tray to cool. Add your choice of dried fruit and mix well. Store in an airtight container. Keeps for 2 weeks.
