Ingredients
  

Garlicky Deep-Fried Snapper

  • 2 cups Oil
  • 1 whole Red Snapper (Maya-Maya) or use 2 fillets, cleaned
  • 2 fillets
  • 4 cloves Garlic thinly sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon Soy Sauce
  • 2 Small chilies (siling labuyo)
  • 3 Garlic
  • 1 teaspoon brown sugar
  • 5 tablespoons fish sauce (patis)
  • 3 tablespoons lime juice

Instructions
 

  • Heat oil in wok and deep-fry the snapper until golden and crispy. Remove from oil and drain.
  • In 2 tablespoons of oil, fry sliced garlic until golden. Add brown sugar and soy sauce. Place fish on serving plate and top with fried garlic if desired.
  • Prepare the sauce: Pound the garlic and chili using a mortar and pestle. Combine with sugar, fish sauce, and lime juice.
