Ingredients
Garlicky Deep-Fried Snapper
- 2 cups Oil
- 1 whole Red Snapper (Maya-Maya) or use 2 fillets, cleaned
- 2 fillets
- 4 cloves Garlic thinly sliced
- 2 tablespoons brown sugar
- 1 tablespoon Soy Sauce
- 2 Small chilies (siling labuyo)
- 3 Garlic
- 1 teaspoon brown sugar
- 5 tablespoons fish sauce (patis)
- 3 tablespoons lime juice
Instructions
- Heat oil in wok and deep-fry the snapper until golden and crispy. Remove from oil and drain.
- In 2 tablespoons of oil, fry sliced garlic until golden. Add brown sugar and soy sauce. Place fish on serving plate and top with fried garlic if desired.
- Prepare the sauce: Pound the garlic and chili using a mortar and pestle. Combine with sugar, fish sauce, and lime juice.
