Ginataang Pampano Ingredients

  • 2 tablespoons Oil
  • 6 cloves Garlic crushed
  • 1 medium red onion roughly chopped
  • 1 thumb-sized ginger roughly chopped
  • 2 pieces Pompano cleaned and gutted
  • 2 stalks Leeks sliced
  • 1 piece green finger chili (siling pangsigang)
  • 4-5 pieces birds eye chilies (siling labuyo)
  • 1 400-ml can coconut milk
  • 1/8 Cup water
  • 1 tablespoon sugar
  • Salt to taste
  • ground black pepper to taste


  • Heat oil in a large frying pan and add onions, ginger, and garlic. Saute until garlic is fragrant and onions are translucent.
  • Add the pampano and cook for 2 minutes on each side.
  • Pour in the coconut milk and simmer for 3 minutes. Add the siling pangsigang and bird’s eye chilies. Add the water. Season with salt and pepper. Add sugar.
  • Simmer for 20 minutes or until the coconut milk separates. Serve hot with rice.
