1/2 cup brown sugar
2 tablespoons fish sauce (patis)
10 grams ginger, peeled and crushed
1/2 red chili pepper (siling labuyo), minced
1/2 teaspoon lime juice
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
1/2 teaspoon black pepper
8 prawns (sugpo), peeled and deveined, with heads and tails left on
2 tablespoons cilantro (wansoy), (leaves), for garnish
Melt sugar in a saucepan over low heat.
Add fish sauce, 1 cup water, ginger, chilies, lime juice, salt, cinnamon, and pepper. Simmer for 4 minutes or until thick.
Add prawns and cook for 2 to 3 minutes. Transfer to a serving plate and garnish with cilantro.
