Ingredients
Gluten-Free Chocolate Cookies
- 1/2 Cup almond meal
- 1/4 Cup tapioca flour
- 1/4 Cup rice flour
- 3/4 Cup unsweetened cocoa powder
- 1 teaspoon Baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon Salt
- 1/2 Cup white sugar
- 1/2 Cup Butter
- 1 large Egg
- 1/3 Cup milk
Instructions
- Preheat oven to 375°f.
- In a bowl, combine almond meal, tapioca flour, rice flour, cocoa powder, baking soda, baking powder, and salt. Mix well.
- In the bowl of an electric mixer fitted with the paddle attachment, cream sugar and butter together on medium-high speed.
- Turn down speed to low and add the egg. Add half of the flour mixture, then add the milk. Add the rest of the flour mixture. Mix until well-combined.
- Line a baking sheet with parchment paper or a silicone mat. Scoop out 11/2 ounces of dough and form into rounds. Space rounds 2 inches apart on the baking sheet. Bake in the preheated oven for 7 to 9 minutes.
- Remove from the oven. Transfer to wire racks and let cool. Serve slightly warm.
