Grilled Cheese and Chicken Sandwich Recipe

Season chicken with salt and pepper; set aside.

Cook bacon on a grill pan until crisp; set bacon aside and leave rendered fat.

Grill chicken in bacon fat over medium heat until cooked, about 3 to 5 minutes per side.

Spread 4 tablespoons butter on both sides of all bread slices. Top 1 slice with chicken, mozzarella, quick-melting cheese, zucchini, bell peppers, and tomatoes. Cover with another slice of bread and press down slightly. Repeat with remaining ingredients to make
4 sandwiches.

Heat a grill pan and add remaining butter. When melted, add sandwich and cook until bread is golden brown underneath, about 3 minutes. Flip to cook the other side until golden brown, about 3 minutes. Repeat with remaining sandwiches. Serve immediately.
