Grilled Cheesesteak Sandwiches

Season beef with salt, pepper, Worcestershire sauce, and liquid seasoning. Marinate for at least 15 minutes.

Heat 1 tablespoon olive oil and melt 1 tablespoon butter in a heavy frying pan or cast-iron pan. Sauté mushrooms for 2 to 3 minutes. Add bell peppers and sauté for 1 minute. Season with salt and pepper. Transfer to a bowl and set aside.

In the same pan, add remaining oil and butter. Cook beef until lightly browned. Season with salt and pepper. Remove from heat.

Place bread slices on a baking sheet or chopping board. Spread butter on both sides. 

Arrange beef on 4 bread slices. Top with a slice each of Gouda and Gruyère, and with mushroom-bell pepper mixture. Top with remaining bread slices.

Grill sandwiches on a preheated frying pan or griddle. Cook over medium-low heat until bread is crisp and golden and the cheese has melted, about 2 to 3 minutes per side. Serve immediately.
