Ingredients
  

Grilled Chicken with Yogurt and Kaffir Lime

  • 1 Cup plain yogurt
  • 1 head Garlic chopped
  • 1 tablespoon lemon zest
  • 1/4 Cup lemon juice
  • 4 fresh kaffir lime leaves chopped
  • 1 tablespoon sea salt
  • 2 teaspoons black pepper
  • 500 Grams Chicken use breast part
  • 1 Cup Kaffir Lime Marinade divided
  • 1 tablespoon olive oil
  • 1/2 Cup All-purpose cream
  • pita bread quartered, to serve (optional)
  • cucumber salad to serve (optional)

Instructions
 

  • Make the Yogurt and Kaffir Lime Marinade: Mix together all ingredients in a bowl. Store in the refrigerator until ready to use.
  • Prep the chicken: Using a rolling pin, flatten each chicken breast until 1/4-inch-thick.
  • Arrange chicken breasts in a shallow bowl. Pour over 1/2 cup Yogurt and Kaffir Lime Marinade. Turn to coat each piece. Marinate in the refrigerator for at least 1 hour.
  • Heat grill to medium-high heat. Drizzle with olive oil. Grill chicken breasts until cooked through, about 4 to 5 minutes per side.
  • In a bowl, mix together remaining Yogurt and Kaffir Lime Marinade and all-purpose cream.
  • Serve grilled chicken with yogurt-kaffir lime sauce, pita bread, and a cold cucumber salad.
