Ingredients
Grilled Chicken with Yogurt and Kaffir Lime
- 1 Cup plain yogurt
- 1 head Garlic chopped
- 1 tablespoon lemon zest
- 1/4 Cup lemon juice
- 4 fresh kaffir lime leaves chopped
- 1 tablespoon sea salt
- 2 teaspoons black pepper
- 500 Grams Chicken use breast part
- 1 Cup Kaffir Lime Marinade divided
- 1 tablespoon olive oil
- 1/2 Cup All-purpose cream
- pita bread quartered, to serve (optional)
- cucumber salad to serve (optional)
Instructions
- Make the Yogurt and Kaffir Lime Marinade: Mix together all ingredients in a bowl. Store in the refrigerator until ready to use.
- Prep the chicken: Using a rolling pin, flatten each chicken breast until 1/4-inch-thick.
- Arrange chicken breasts in a shallow bowl. Pour over 1/2 cup Yogurt and Kaffir Lime Marinade. Turn to coat each piece. Marinate in the refrigerator for at least 1 hour.
- Heat grill to medium-high heat. Drizzle with olive oil. Grill chicken breasts until cooked through, about 4 to 5 minutes per side.
- In a bowl, mix together remaining Yogurt and Kaffir Lime Marinade and all-purpose cream.
- Serve grilled chicken with yogurt-kaffir lime sauce, pita bread, and a cold cucumber salad.
