Ingredients
Grilled Eggplant Ingredients
- 10 large Japanese eggplant sliced diagonally into 1/2-inch thick pieces
- 1/2 cup plus 4 tablespoons olive oil
- 2 teaspoons ground cumin
- 3 teaspoons Salt divided
- 2 teaspoons black pepper divided
- 1/2 Cup red wine vinegar
- 1 tablespoon Garlic chopped
- 2 teaspoons Dijon mustard
- 4 teaspoons sugar
- 1 Cup feta cheese crumbled
Instructions
- Toss eggplants, 4 tablespoons olive oil, cumin, 2 teaspoons salt, and 1 teaspoon pepper in a bowl.
- Toss eggplants, 4 tablespoons olive oil, cumin, 2 teaspoons salt, and 1 teaspoon pepper in a bowl.
- Combine red wine vinegar, garlic, mustard, sugar, and remaining salt and pepper in a bowl. Whisk in remaining olive oil.
- Toss grilled eggplants into dressing. Top with crumbled feta cheese. Serve immediately.
