Ingredients
  

Grilled Lamb with Rosemary, Mint, and Yogurt

  • 1 kilo lamb (use shoulder part), cut into 2-inch cubes
  • 1 Cup yogurt
  • 1 onion chopped
  • 2 tablespoons Garlic crushed
  • tablespoons fresh rosemary chopped
  • 2 tablespoons mint leaves chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil
  • lemon for garnish
  • Lettuce for garnish
  • Cherry tomatoes for garnish
  • 2 cups yogurt
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 tablespoons Garlic crushed

Instructions
 

  • Put lamb cubes in a bowl and combine with all the other ingredients. Marinate overnight.
  • On a grill pan over medium heat, cook marinated lamb until golden brown. (Alternatively, skewer lamb cubes and grill over charcoal.)
  • Serve with lemon wedges, lettuce, tomatoes and yogurt cheese dip.
  • Make the yogurt cheese dip: Wet a cotton towel and wring dry with your hands. Get a sieve and put it over a bowl, then lay the towel over the sieve.
  • Pour the yogurt over the towel and fold towel over to cover. Leave in the refrigerator overnight.
  • The following day, remove the drained yogurt and transfer to a glass bowl.
  • Stir in salt, pepper, and crushed garlic. Serve with grilled lamb.
