Grilled Pork Chops with Banana Chutney Ingredients

  • 3 to 4 cloves Garlic minced
  • 1 teaspoon dried oregano
  • 1 tablespoon paprika
  • 2 tablespoons brown sugar
  • 1/4 teaspoon Salt
  • 2 pieces pork use pork chops
  • canola oil for grilling
  • 2 teaspoons canola oil
  • 1/2 piece red onion minced
  • 1 piece red chili pepper (siling labuyo) seeded and minced
  • 2 pieces banana (Senorita variety), sliced
  • 1 Cup pineapple chunks
  • 1/4 Cup unsweetened pineapple juice
  • 1/4 Cup brown sugar
  • 1/2 teaspoon curry powder
  • 1/4 Cup dried cranberries

Instructions
 

  • Mix together garlic, oregano, paprika, brown sugar, and salt into a paste; rub all over pork chops. Marinate, covered, in the refrigerator for 1 to 2 hours.
  • Make the chutney: Heat oil in a saucepan over medium heat. Sauté onion and chili until fragrant. Add bananas, pineapple chunks and juice, brown sugar, and curry powder. Bring to a gentle boil. Reduce heat and simmer for 45 minutes or until reduced, stirring occasionally. Stir in cranberries and let cool.
  • Heat oil in a grill pan over medium heat. Grill pork chops until golden, about 8 to 10 minutes per side. Serve topped with chutney.
