Ingredients
Grilled Steak with Blue Cheese Sauce
- 1 piece (400gram) Beef (use rib-eye steak), at room temperature
- sea salt to season
- Pepper to season
- 1 tablespoons vegetable oil
- 1 tablespoon Butter
- 1 tablespoon onion minced
- 2 tablespoons dry white wine
- 2 tablespoons parsley sprigs minced
- 1 tablespoon dried thyme leaves chopped
- 1 tablespoon Kutsay (Chives) chopped
- 30 Grams gruyere cheese grated
- 45 Grams blue cheese crumbled
- 1/4 Cup Butter cubed and softened
- Beans (Sitaw) to serve (optional)
Instructions
- Season steak with salt and pepper.
- Heat oil in a cast iron pan. When pan is almost smoking, add steak and sear over high heat. Cook steak according to your preferred doneness, about 2 1/2 to 3 minutes per side for a medium-rare steak. Set steak aside and let it rest.
- Make the blue cheese sauce: In the same pan, melt butter over medium heat. Sauté onion until translucent.
- Add sherry or white wine and scrape bottom of pan with a wooden spoon to loosen any brown bits.
- Add herbs. Stir well then remove pan from heat. Add Gruyère and blue cheeses. Stir mixture to slightly bring down temperature from hot to warm.
- Once mixture has cooled, stir in softened butter gradually, whisking continuously until sauce comes together.
- To serve, place steak on a serving plate. Pour cheese sauce over. Serve with buttered green beans, seared tomatoes, and a side salad, if desired.
