Nothing says summer like grilled fish paired with salsa and salted eggs. This recipe includes stuffing tilapia with the good stuff-tomatoes, ginger, and lemongrass. It's perfect for a beach picnic!

Grilled Stuffed Tilapia Ingredients

1/4 cup tomatoes, chopped

1 tablespoon onion, chopped

1 tablespoon kamias, chopped

1 tablespoon ginger, chopped

1/2 teaspoon lemongrass (tanglad), chopped

salt, to taste

2 pieces tilapia, cleaned and gutted

How to Cook Grilled Stuffed Tilapia

Make the stuffing: Combine all ingredients in a bowl; season well with salt and pepper. Stuff into the cavity of the whole fish. Season fish well with salt and pepper.

Preheat a charcoal grill. Grill fish until cooked through, about 3 to 5 minutes on each side. Transfer to a platter.
Serve grilled fish with salsa (optional).
