Ham and Egg Breakfast Cups Recipe

Make the pesto: Purée all ingredients in a blender or food processor until smooth. Season with salt and pepper. Set aside.

Preheat oven to 375°F.

Grease a 6-hole regular muffin tin with oil. Place a ham slice in each hole, molding to form a cup. Break an egg into each cup. Spread about 1 tablespoon pesto on top.

Bake cups in the preheated oven for 15 minutes or until eggs are cooked to your preferred doneness. Cool for 2 minutes before serving.
