This pork hamonado recipe yields a sweet pork loaf: the pork is marinated in pineapple juice overnight. It is marinated and simply simmered, resulting in flavorful, sweet pork. You may also skip the rolling the pork into a log but make sure it is marinated properly, so the pork absorbs all the delicious sweet flavors.
Some recipe versions include pan-frying the pork shoulder then pouring in the marinade and letting it simmer to become a thick sauce. When serving during a party or a fiesta, it is garnished with more pineapple slices.
