Ingredients
  

Herb-crusted Pork Loin with Tomato Sauce

  • 500 Grams pork use boneless pork loin
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves Garlic minced
  • 1 teaspoon thyme leaves minced
  • 1 Table Spoon fresh basil leaves minced
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh oregano
  • 1/2 Cup olive oil
  • 1 medium onion chopped
  • 2 cloves Garlic minced
  • 1 stalk celery chopped
  • 1 piece carrot chopped
  • 900 Grams canned crushed tomatoes
  • 4 pieces fresh basil leaves
  • 2 pieces bay leaf
  • long beans (sitaw) blanched, to serve

Instructions
 

  • Preheat oven to 400°f. Place a rack on a baking sheet and arrange pork loin on top. Season with salt and pepper.
     
  • Combine olive oil, garlic, and herbs in a bowl. Rub mixture on the pork loin, covering the meat all over.
     
  •  Roast pork for 30 to 45 minutes. Use a thermometer to test the doneness of meat. Once the internal temperature reaches 155°f, remove pork loin from the oven. Let meat rest for 5 to 10 minutes before slicing.
     
  • Make the tomato sauce: heat oil in a saucepan. Sauté onions and garlic until onions are soft and translucent, about 2 minutes. Add celery and carrots; season with salt and pepper. Sauté vegetables until soft, about 5 minutes.
     
  • Add tomatoes, basil, and bay leaves. Simmer, covered, for 1 hour or until thick. Remove bay leaves and taste to adjust seasoning. Transfer tomato sauce to a blender and process until smooth.
     
  • Serve sliced pork loin with tomato sauce and blanched green beans.
