Ingredients
Herb-crusted Pork Loin with Tomato Sauce
- 500 Grams pork use boneless pork loin
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- 2 cloves Garlic minced
- 1 teaspoon thyme leaves minced
- 1 Table Spoon fresh basil leaves minced
- 1 teaspoon fresh rosemary
- 1 teaspoon fresh oregano
- 1/2 Cup olive oil
- 1 medium onion chopped
- 2 cloves Garlic minced
- 1 stalk celery chopped
- 1 piece carrot chopped
- 900 Grams canned crushed tomatoes
- 4 pieces fresh basil leaves
- 2 pieces bay leaf
- long beans (sitaw) blanched, to serve
Instructions
- Preheat oven to 400°f. Place a rack on a baking sheet and arrange pork loin on top. Season with salt and pepper. Â
- Combine olive oil, garlic, and herbs in a bowl. Rub mixture on the pork loin, covering the meat all over. Â
-  Roast pork for 30 to 45 minutes. Use a thermometer to test the doneness of meat. Once the internal temperature reaches 155°f, remove pork loin from the oven. Let meat rest for 5 to 10 minutes before slicing. Â
- Make the tomato sauce: heat oil in a saucepan. Sauté onions and garlic until onions are soft and translucent, about 2 minutes. Add celery and carrots; season with salt and pepper. Sauté vegetables until soft, about 5 minutes. Â
- Add tomatoes, basil, and bay leaves. Simmer, covered, for 1 hour or until thick. Remove bay leaves and taste to adjust seasoning. Transfer tomato sauce to a blender and process until smooth. Â
- Serve sliced pork loin with tomato sauce and blanched green beans. Â
