Ingredients
  

Herb-Crusted Tuna in Mango-Mustard Cream

  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 120 Grams Tuna use tuna fillet
  • 1 Table Spoon canola oil
  • 75 Grams mango pureed
  • 50 ml All-purpose cream
  • 1 piece Egg yolks only
  • 1 teaspoon mustard
  • 1/8 Cup mango chopped
  • green onion chopped, for garnish (optional)

Instructions
 

  • Mix together rosemary, oregano, thyme, salt, and pepper in a small bowl. Rub mixture on all sides of the tuna fillet. Set aside and chill until ready to use.
  • Make the mango-mustard cream: In a double boiler, mix all the ingredients, whisking until thick.
  • Heat oil in a cast iron pan or grill pan. Sear tuna on high heat just until medium doneness, making sure a crust on the exterior has formed.
  • Arrange tuna on a plate. Drizzle mango-mustard cream on top or serve on the side. Top with chopped mangoes and garnish with green onions, if desired.
