- 4 large Potatoes starchy, about 900 grams, cut into 2 by 1/3-inch sticks
- 3 to 4 cups vegetable oil
- Salt to taste
- Peel potatoes and cut into 2x¹?³-inch sticks. Soak in water for 30 minutes or overnight in the refrigerator. Heat vegetable oil in a large, heavy-bottomed pot fitted with a deepfry thermometer until temperature registers 325°F. Drain potatoes and pat dry.
