Here's an easy but tasty dessert to whip up in the kitchen.
1/2 cup unsalted butter, softened
1/4 cup honey
1/2 cup brown sugar
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup quick-cooking oatmeal
In a large mixing bowl, cream the butter, honey and brown sugar. Beat in the egg. Sift in flour, baking powder, and baking soda. Mix in oatmeal. Dough will be soft.
Divide dough into two. Turn out dough on plastic wrap and roll each into three-inch thick logs. Wrap in plastic wrap and twist ends. Refrigerate overnight or until needed.
Preheat oven to 350°F.Unwrap dough. Slice into rounds. Place on a non-stick cookie sheet and bake 6-8 minutes. Cool before packing with a milk box.
