Honey Walnut Shrimp Recipe

In a small saucepan over medium heat, stir together water and sugar. Bring to a boil, and add the walnuts. Boil for about 2 minutes then drain. Place on a baking tray to dry. Set aside. 

Heat oil in a heavy-bottomed deep skillet over medium-high heat. 

Meanwhile, in a small bowl, whisk the egg. In another bowl, add the cornstarch. Dip each shrimp into the egg and then the cornstarch. Immediately fry the shrimp for about 5 minutes or until each turns pink and the outside is golden brown. Remove with a slotted spoon and drain on a paper towel.

In a medium bowl, whisk together mayonnaise, honey, and sweetened condensed milk. Add the shrimp, and toss to coat. Transfer to a plate. Add the candied walnuts, and garnish with chopped scallions. Serve immediately.
