Hummus Toast Recipe

Ingredients
Hummus Toast Ingredients
- 1 400-gram can chickepeas drained
- 3 cloves Garlic peeled
- 1/4 Cup olive oil more as needed
- 1/2 lemon
- 2 tablespoons Butter
- 4 spears asparagus broken into 2-inch lengths
- 1 Cup white button mushrooms sliced
- 6 slices sourdough bread
- 1 tablespoon parmesan cheese grated
Instructions
- In a blender or food processor, dump in chickpeas, garlic, olive oil, and the juice from the lemon half. Process mixture, scraping as needed, until pureed. Mixture will be thick. Adjust consistency with more olive oil as desired. Season to taste with salt and pepper, and process again to mix. Transfer to a bowl, and set aside.
- In a frying pan over medium heat, melt butter. Add asparagus and quickly saute until bright green, about 10 seconds. Remove with tongs, and transfer to a plate. Add and cook garlic in remaining butter until translucent. Add mushrooms, and sauté until browned. Season with a little salt and pepper. Remove from pan, transfer to a bowl, and set aside.
- To assemble, toast bread. Spread hummus onto bread, then top with mushrooms and asparagus. Sprinkle with Parmesan cheese, and serve immediately. Recipe originally published in the July 2017 issue of Good Housekeeping Philippines.
