Ice Cream Fruit Parfait Recipe

Make Dressing: In a large stainless steel bowl over a bowl of ice water, whisk ice cream and whipping cream to soft peaks. Set aside.

To serve, layer a tablespoonful each of nata de coco, macapuno, kiwi, mango, pineapple, cherries and halaya, if using, in a parfait glass, adding a dollop of whipped cream halfway through and on top before topping the concoction with a cherry. Repeat with remaining fruit and cream. Serve chilled.
