These super tasty grilled chicken wings are so easy to make!
1 head garlic, minced
1/2 tablespoon achuete powder (annatto powder)
2 tablespoons ginger, chopped
2 tablespoons brown sugar
1/3 cup coconut vinegar
3 tablespoons calamansi juice
2 stalks lemongrass (tanglad), trimmed and chopped finely
1 teaspoon salt
1/4 teaspoon pepper
1 kilogram chicken, (use wings), with a slit on each piece
2 tablespoons margarine
2 tablespoons achuete oil (annatto oil)
1 cup sweetened calamansi concentrate
1/2 cup soy sauce
1 tablespoon calamansi juice
3 tablespoons cornstarch
1 tablespoon water
Combine garlic, annatto powder, ginger, brown sugar, coconut vinegar, calamansi juice, lemongrass, salt, and pepper in a bowl.
Add chicken wings. Marinate in an airtight container overnight in the refrigerator.
Combine margarine, annatto oil, and salt in a bowl; mix well.
Heat a grill pan; add chicken, basting with margarine mixture. Cook chicken until done, about 25 to 30 minutes.
Make the toyomansi glaze: Simmer calamansi concentrate, soy sauce, and calamansi juice in a saucepan. Thicken with cornstarch dissolved in water.
Drizzle over chicken and serve with atsuete oil.
