Ingredients
  

Jambalaya Fried Rice

  • 1/3 Cup canola oil
  • 1 1/2 cups onion chopped
  • 1 Cup celery chopped
  • 1 Cup green bell pepper chopped
  • 2 tablespoons Garlic minced
  • 200 Grams smoked sausage (Kielbasa) sliced
  • 2 teaspoons Cajun seasoning
  • 4 cups rice cooked
  • 2 tablespoons paprika
  • 2 teaspoons white pepper
  • 2 teaspoons black pepper
  • 1/2 teaspoon dried thyme leaves
  • 1 teaspoon ground oregano
  • 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon cumin
  • 1 teaspoon marjoram

Instructions
 

  • Prepare the seasoning: Mix all spices and flavorings together, and shake until even in color. Set aside and use as directed.
  • Sauté chopped onions, celery and green bell pepper in canola oil. Cook until onions are translucent. Add minced garlic. Then add cubed chicken breast and cook for another 10 minutes. Throw in sausage slices and Cajun seasoning. Mix well. Then add cooked rice and toss well for an even distribution of all ingredients. Taste and season if needed.
