Pili Nut Cake Recipe

Preheat oven to 325°F.

Lightly grease and flour two 10-inch round cake pans.

Sift together flour, baking powder, and salt. Set aside.

In an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, around 

Add half the flour mixture and half the milk. Mix until well incorporated, not more than 30 seconds. Add remaining flour and milk; mix until just incorporated.

Mix in pili nuts. Divide batter among two pans and level with a spatula or the back of a spoon.  

Sprinkle each cake with the split pili nuts. Combine white and brown sugars; sprinkle generously over nuts.

Cover pan with foil and bake in the preheated oven for 20 minutes.

Remove pan from oven. Remove foil and bake for another 20 to 30 minutes. Check for doneness by inserting a clean toothpick into the center of the cake. If it comes out clean, the cake is done. Let cool and serve with some whipped cream or vanilla ice cream on the side.
