Just-for-me Lasagna

Make the meat sauce: Heat butter in a sauté pan; add carrots, celery, and onions; cook until onions are pale gold in color.

Add ground beef and ground pork. Increase heat to high; cook until browned.

Add milk. Turn down heat and let simmer until almost all liquid has evaporated, about 20 to 30 minutes. Stir in tomato paste until combined.

Add chopped tomatoes, salt, and pepper. Bring to simmer until slightly thickened, about 15 minutes. Transfer meat sauce to a bowl and cool.

Make the béchamel sauce: Melt butter in a saucepan over medium heat. Add flour and whisk constantly, about 1 1/2 minutes. Gradually whisk in milk then stir, working it into a thickened sauce. Continue to stir until it comes to a boil. Season with salt. Transfer to a bowl and cool.

Preheat oven to 375°F. Mix 3/4 cup warm béchamel with all of the meat sauce until combined.

Assemble the lasagna: Cut lasagna strips into a size and shape that will fit in your individual dishes. Portion some of the béchamel-meat sauce mixture on the bottoms of the individual dishes. Place a cut lasagna sheet on top. Spread béchamel-meat sauce mixture on top of lasagna sheet. Spread bechamel sauce over. Sprinkle Parmesan cheese. Repeat layering 3 more times, ending with a lasagna sheet. Cover with bechamel sauce. Sprinkle with Parmesan cheese on top. Repeat with the rest of the ingredients and dishes.

Bake until cheese is golden brown and sauce is bubbling, about 45 to 50 minutes. Cool
