A light yet nutritious after-school snack!
1 1/4 cups kalabasa (squash), peeled, cubed
1 piece carrot, peeled, cubed
3/4 cup sunflower nuts
1/4 ground cumin
Place kalabasa, carrots, and sunflower nuts in a food processor and process until finelychopped. Add cream cheese, water, ground cumin, salt, and ground black pepper to taste. Process again until well mixed. Spread on crackers. Serve.
