Ingredients
  

Kangkong Noodles with Sambal Sauce

  • 3 tablespoons peanut oil divided
  • 4 cloves Garlic minced
  • 5 cups chinese kangkong cut into 4-inch pieces andsliced lengthwise into strips
  • Pepper to taste
  • 1 Cup canned diced tomatoes seeded
  • 2 tablespoons store-bought sambal sauce
  • nuts coarsely chopped (optional)

Instructions
 

  • Heat half of the oil in a wok and sauté garlic until light brown. Increase heat to high and stir-fry kangkong stalks. Season lightly with salt and pepper. Set aside and keep warm.
  • Make the sambal sauce: In the same pan, heat remaining oil and sauté diced tomatoes until soft. Add sambal sauce and mix well.
  • Arrange kangkong on a serving platter. Pour sambal sauce on top. Sprinkle with chopped peanuts, if desired.
