Ingredients
  

Kinilaw na Tanigue with Green Mangoes

  • 1/2 kilo tanigue (Spanish mackerel) cut into cubes
  • 1 medium red onion cubes
  • 1 green mango cubed
  • 1/2 Cup Coconut Palm Vinegar
  • 1 teaspoon brown sugar
  • Salt to taste
  • 1 red chili pepper (siling labuyo) chopped (optional)

Instructions
 

  • Combine tanigue, onions, and mangoes in a bowl.
     
  • Add palm vinegar and brown sugar, then season with salt and pepper to taste. Add chopped chilies, if using.
  • Chill for at least 30 minutes before serving.
     
     
    TIP: Kinilaw is essentially a raw fish salad marinated in citrus juices or vinegar. for food safety, use the freshest fish possible.
