The Charlie Chan pasta is also known as kung pao chicken pasta. This chunky chicken pasta has Chinese roots that give it the sweet and spicy flavors that make it addicting and delicious. Best of all, this kung pao pasta recipe can easily be made at home with a few key ingredients. With this recipe, what you get is chicken pasta that’s neither tomato nor cream-based but is just as popular and flavorful.

Charlie Chan-Style Pasta Ingredients

  • 1/2 Cup chicken broth more as needed
  • 1 tablespoon cornstarch
  • 1/4 Cup Soy Sauce
  • 1/4 Cup Vinegar chinese red
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons chili garlic sauce
  • 1 tablespoon sesame oil
  • 2 pieces chicken breast fillets cubed small
  • 1 head Garlic peeled, minced
  • 1/2 Cup salted peanuts
  • 5 pieces bird’s eye chili (siling labuyo)
  • 500 Grams spaghetti cooked according to package directions
  • Oil for frying


  • Make Kung Pao sauce: In a saucepan, whisk together chicken stock, cornstarch, soy sauce, vinegar, chili garlic sauce, brown sugar, and sesame oil. Place over medium heat and bring to a boil. Lower heat and simmer until the sauce thickens, stirring. Set aside.
  • In a wok over medium heat, heat enough oil to cover the bottom. Lightly season chicken breasts with salt and ground pepper. Add to the hot wok and cook until cooked through. Cook in batches as needed. Set aside.
  • Add peanuts and stir fry until heated through and toasted again. Return chicken to the wok and add half the kung pao sauce and siling labuyo.
  • Add cooked spaghetti noodles and toss to coat. If needed, add a little chicken broth or even water to thin down the sauce enough to coat. Serve once heated through.
