Ingredients
  

Laap Mu (Minced Pork with Toasted Rice)

  • 1/2 kilo pork use ground pork
  • 1 teaspoon Salt
  • 2 Lemongrass Bulb (Tanglad) pounded and chopped
  • 2 pieces calamansi juiced
  • 1 tablespoon cooking oil
  • 1 teaspoon Garlic minced
  • 2 teaspoons shallots (sibuyas Tagalog) minced
  • 1 to 2 Thai Red Peppers sliced
  • 2/3 Cup mint leaves chopped, plus extra for garnish
  • 1/2 Cup green onion chopped
  • 4 kaffir lime leaf ribs removed and leaves chopped
  • 2 tablespoons fish sauce (patis) (or to taste)
  • 4 tablespoons rice flour divided
  • cabbage to serve (optional)

Instructions
 

  • Place ground pork in a frying pan and add just enough water to cover. Simmer for about 10 minutes. Add salt, lemongrass, and calamansi juice.
  • Let water evaporate. Add oil to pork and sauté for about a minute. Set aside.
  • Mix together garlic, shallots, chilies, mint, cilantro, green onions, kaffir lime leaves, fish sauce, and 3 1/2 tablespoons ground rice. Add cooked pork and mix well.
  • Place pork mixture in a serving bowl and top with remaining ground rice. Serve with cabbage, Baguio beans, and Thai basil leaves on the side.
