Ingredients
  

Lasagna Verde Ingredients

  • 4 tablespoons Oil
  • 1 Table Spoon Garlic minced
  • 2 tablespoons onion chopped
  • 2 1/2 cups Chicken (use breast part, cooked), shredded
  • 1 Pack spaghetti sauce
  • 2 tablespoons sugar
  • 1/4 teaspoon Italian seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/4 Cup Butter
  • 1/4 Cup all-purpose flour
  • 1 can evaporated milk
  • 2/3 Cup water
  • 1 tablespoon Salt
  • Pepper
  • 2 tablespoons Oil
  • 6 cups spinach leaves coarsely chopped
  • 4 tablespoons onion chopped
  • 1 Cup cream cheese softened
  • 1 Pack lasagna sheets ooked al dente
  • 2 cups parmesan cheese grated
  • 2 cups mozzarella cheese grated

Instructions
 

  • Prepare the red sauce: Heat oil in a pan then sauté garlic and onions. Add chicken and cook for a minute. Pour in spaghetti sauce and simmer for 2 to 5 minutes. Season with sugar, Italian seasoning, salt, and pepper. Set aside.
  • Prepare the white sauce: Melt butter in a pan and add flour. Stir until blended. Gradually pour in milk and water. Mix with a wire whisk to remove lumps. Stir constantly and cook until thick. Season to taste.
  • Prepare spinach: Heat oil in a skillet then sauté onions until transparent. Add spinach and cook until just wilted.
  • In a bowl, combine cream cheese and cottage cheese. Add the sautéed spinach. Season to taste. Blend well.
  • In a baking dish, spread some red sauce at the bottom to keep pasta from sticking. Top with sheets of cooked lasagna. Over pasta, spread more red sauce. Top with spinach mixture then with white sauce. Sprinkle with some Parmesan cheese.
  • Repeat the layers two more times. Top with a final layer of white sauce then sprinkle with Parmesan cheese and mozzarella.
  • Bake in a preheated 350°F oven for 15 to 25 minutes or until cheese is melted and pasta is heated through. TIP: You can use lean ground meat instead of chicken or make an all-veggie version by cooking diced tomatoes, zucchini, carrots, bell peppers and eggplant with the red sauce.
