Ingredients
  

Lechon Kawali and Crispy Noodle with Peaches in Honey, Balsamic, and Peach Dressing

  • 1 small pack vermicelli (sotanghon) noodles
  • 1 can peach sliced
  • Oil for deep-frying
  • 1 bag mixed greens
  • tablespoons honey
  • 1/3 Cup balsamic vinegar
  • canned peaches

Instructions
 

  • Heat oil to deep-fry lechon kawali. (Start on low heat to cook the inside of the meat, then take it out and turn the heat up high. Deep-fry again for a few minutes or until golden brown. "Flash frying" makes the skin crispy while keeping the meat inside evenly cooked soft.) Set aside.
  • In the same container where lechon kawali was deep-fried, deep-fry the noodle in medium heat. When the noodles pop up, take them out and set aside. Combine the ingredients of the dressing. Assemble salad: Start with greens, drizzle with dressing, throw on sliced peaches, place bed of crispy noodles and top with chunks of lechon kawali.
