Ingredients
Roasted Chicken Paksiw Ingredients
- 1 whole Chicken roasted
- 3 pieces laurel leaves
- 4 pieces green bell pepper or green jalapeno
- 4 pieces red bell pepper or red jalapeno
- 1/2 teaspoon black peppercorns
- 3 tablespoons brown sugar
- 4 tablespoons white vinegar
- 1 whole red onion sliced into four pieces
- 4 clove Garlic
- 2 cups water
- 1 tablespoon cornstarch
- 1 Cup lechon sauce
Instructions
- Chop the roasted chicken into bite-sized pieces.
- Mix the laurel leaves, green bell pepper, red bell pepper, peppercorns, brown sugar, white vinegar, onion, garlic, and water together in a large pot or saucepan over medium heat.
- Add the chicken. Let it simmer until the chicken is more tender than usual.
- While simmering, stir the cornstarch in a half cup of room temperature water then add directly into the pan while stirring. Let the mixture become thick before serving.
