Ingredients
  

Lemon Bars

  • 3/4 Cup all-purpose flour
  • 1/4 Cup confectioners sugar
  • 1/4 Cup sugar
  • 1/4 Cup cornstarch
  • 1/4 teaspoon Salt
  • 3/4 Cup Butter
  • 1/4 Cup all-purpose flour
  • 1 teaspoon baking powder
  • 6 medium Egg
  • 2 cups white sugar
  • lemon zest
  • confectioners sugar

Instructions
 

  • Preheat oven to 350 degrees fahrenheit.
  • Make the dough: Combine flour, sugar, cornstarch, and salt in a bowl. Add butter. Use a fork to cut in butter until dough resembles coarse crumbs.
  • Press mixture onto the bottom of a 9x9-inch square pan lined with parchment paper. Chill in the refrigerator for 30 minutes.
  • Bake in the preheated oven for 20 minutes or until lightly browned.
  • Meanwhile, make the filling: Mix together flour, baking powder, and lemon juice. In a separate bowl, combine eggs, sugar and lemon zest. Add the flour mixture to the egg mixture; stir until well combined.
  • Pour mixture over the pre-baked crust and bake in a 350 degree fahrenheit oven for another 25 to 30 minutes. Let cool in the pan until set, about 3 to 4 hours.
  • Slice into 25 squares. Dust tops with confectioners sugar.
