These tart, luscious treats are meant to be shared!
3/4 cup all-purpose flour
1/4 cup confectioner's sugar
1/4 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
3/4 cup butter
1/4 cup all-purpose flour
1 teaspoon baking powder
6 medium egg
2 cups white sugar
Preheat oven to 350 degrees fahrenheit.
Make the dough: Combine flour, sugar, cornstarch, and salt in a bowl. Add butter. Use a fork to cut in butter until dough resembles coarse crumbs.
Press mixture onto the bottom of a 9x9-inch square pan lined with parchment paper. Chill in the refrigerator for 30 minutes.
Bake in the preheated oven for 20 minutes or until lightly browned.
Meanwhile, make the filling: Mix together flour, baking powder, and lemon juice. In a separate bowl, combine eggs, sugar and lemon zest. Add the flour mixture to the egg mixture; stir until well combined.
Pour mixture over the pre-baked crust and bake in a 350 degree fahrenheit oven for another 25 to 30 minutes. Let cool in the pan until set, about 3 to 4 hours.
Slice into 25 squares. Dust tops with confectioners' sugar.
