Lola Virginia's Asadong Manok de Carajay
This heirloom recipe was handed down from culinary legend Lola Beatriz.
It can be said that the Calalang clan is a family of cooks. Vanna Calalang trained at the California Culinary Academy; dad Conrad once managed a number of restaurants and is currently part of the Philippine Kulinarya team; and grandmother Virginia, well, “she was always in the kitchen,” Vanna says. “The asadong manok is one of the dishes Lola always cooks. It’s something that we always looked forward to.” Vanna’s three-year-old daughter Noelle is a fan too, particularly of the mushrooms.
